I was six when I had the first chance to learn what patience means.

My grandmother gave me a magic box as a birthday present,

which neither of us knew would become a gift for life.

I became obsessed with magic,

전 마술놀이에 푹 빠져 지내게 되었지요.

and at 20, I became an amateur dove magician.

스무살 때, 저는 아마추어지만 비둘기 마술사가 되었어요.

This act of magic requires that I train my doves

마술을 하기 위해서 저는 비둘기를 훈련시켜야했죠.

to sit and wait inside my clothing.

앉기, 옷 안에서 기다리기 이런 것을요.

As a young magician, I was always in a rush to make them appear,

어려서 그랬는지, 비둘기를 꺼낼 때마다 매번 다급했어요.

but my teacher told me

그런 저를 보신 스승님께서 말씀하셨어요.

the secret to the success of this magical act

is to make my doves appear only after they've waited patiently

It has to be a mindful kind of patience,

인내하는 것을 스스로 의식할 수 있어야 해요.

the kind that took me some years to master.

마스터가 되기까지 걸리는 세월을 견디도록 말이에요.

When life took me to Shanghai seven years ago,

세월은 흘러 저는 7년전 상하이에 갔습니다.

the mindful patience I learned became almost impossible to practice.

제가 배운 의식적인 인내를 찾아보기란 거의 불가능해졌어요.

In China, where everyone and everything is in a hurry,

중국에 가면, 사람들을 포함한 모든 것들이 바삐 움직여요.

you need to outperform over 1.3 billion other people

13억 인구들 사이에서 경쟁해야만 해요.

to build a better life.

보다 나은 삶을 위해 말이죠.

You hack the system, bend the rules,

제도는 교묘히 바뀌고, 규칙들은 변칙 적용되죠.

circumvent the boundaries.

It is the same when it comes to food ...

음식에 관해서도 마찬가지입니다.

except that when it comes to food,

impatience can have dire consequences.

In the haste to grow more, sell more,

더 많이 키워서 많이 파는 것

4,000 years of agriculture in a country of rich natural resources

비옥한 땅에서 일궈온 4000년 농업이

is spoiled by the overuse of chemicals and pesticides.

화학비료와 농약 남용으로 망가졌습니다.

In 2016, the Chinese government revealed

지난 2016년도에, 중국 정부는 발표했습니다.

half a million food safety violations in just nine months.

지난 9개월 동안 식품위생위반 건수만 50만여 건이라는 거예요.

Alarmingly, one in every four diabetics in the world

놀라운 것은, 전 세계 당뇨환자의 4명 가운데 1명은

now comes from China.

바로 중국인이라는 사실입니다.

The stories around food

음식을 둘러싼 이야기들은

are scary and somewhat overwhelming,

무섭고 왠지 모르게 너무 거대하게 느껴져요.

and I told myself it's time to bring a mindful patience into the impatience.

조급함에는 의식적인 인내가 답이다 라고 제 스스로에게 말했어요.

When I say mindful patience,

의식적인 인내를 다룰 때

I don't mean the ability to wait.

그것은 단순히 참는 능력을 말하는 것이 아니에요.

I mean knowing how to act while waiting.

기다리는 동안 어떤 행동을 할 건지 아는 것을 말합니다.

And so, while I wait for the day

그래서 저는 그 날이 오길 기다리는데요.

when a sustainable food system becomes a reality in China,

지속 가능한 식량생산시스템이 중국에서 자리잡는 그 날을 말이에요.

I launched one of China's first online farmers market

제가 시작한 것은 온라인 농산물 가게인데 중국에서 처음이에요.

to bring local, organically grown produce to families.

그 지역에서 자란, 유기농산물을 가정에 가져다 주는 거예요.

When we went live, 18 months ago,

1년 반 전에 드디어 가동 준비가 되었을 때 일이에요.

the food we could sell then was somewhat dismal.

그 당시 저희가 팔았던 식품들은 왠지 모르게 질이 낮았어요.

We had no fruit and hardly any meat to sell,

과일은 찾아 볼 수도 없었고, 팔 만한 고기도 거의 없었죠.

as none that was sent to the lab passed our zero tolerance test

당시 저희의 엄격한 무관용정책을 통과한 것은 아무것도 없었죠.

towards pesticides, chemicals, antibiotics and hormones.

그 기준은 살충제, 화학 약품, 항생제, 호르몬제 사용여부였어요.

I told our very anxious employees

이에 걱정한 직원들에게 말했습니다.

that we would not give up until we've met every local farmer in China.

중국의 모든 농부를 만나보기 전에는 결코 포기하지 말자고 말이에요.

Today, we supply 240 types of produce

오늘날, 저희가 공급하는 농산물은 240종입니다.

from 57 local farmers.

57곳의 지역 농부로부터 말이죠.

After almost one year of searching,

거의 1년 동안 샅샅이 찾은 끝에

we finally found chemical-free bananas

화학농약을 전혀 쓰지 않은 바나나 재배지는 바로

grown in the backyards of villagers on Hainan Island.

하이난 섬에 있는 마을의 뒤뜰이었어요.

And only two hours away from Shanghai,

상하이에서 고작 두시간 거리였는데

on an island that even Google Maps does not have coordinates for,

심지어 구글지도에도 나오지 않는 그런 섬이었죠.

we found a place where cows eat grass

저희가 찾아간 그곳엔 소들이 풀을 뜯고

and roam free under the blue sky.

푸른 하늘 아래 자유로이 돌아다녀요.

We also work hard on logistics.

한편, 물류센터를 구축하는 데에도 많은 공을 들이고 있습니다.

We deliver our customers' orders in as fast as three hours

고객의 주문 상품을 세 시간 이내에 배달하는데

on electric vehicles,

전기 차량을 이용하고

and we use biodegradable, reusable boxes

자연분해되는 재활용 상자를 이용하면서

to minimize our environmental footprint.

결과적으로 환경에 부담 주는 흔적을 최소화했어요.

I have no doubt that our offerings will continue to grow,

주문 수량이 점점 늘어날 거라는 것은 의심하지 않지만

but it will take time,

시간이 걸리겠죠.

and I know a lot more people are needed to shape the future of good food.

좋은 음식의 미래를 꾸리는 데에는 보다 많은 사람들이 필요하다는 것을 알게 되었죠.

So last year, I founded China's first food tech accelerator and VC platform

그래서 작년에 중국 최초로 식품 기술 개발에 쓰일 벤쳐 자금 플랫폼을 열었어요.

to help start-ups to shape the future of good food

좋은 식품의 미래를 꾸려가는 시작단계에 도움이 될 거예요.

the way they want,

스스로 원하는 방식으로 말이죠.

be that through using edible insects as a more sustainable source of protein

보다 지속가능한 단백질 섭취원으로서 식용 곤충을 사용해 본다거나

or using essential oils to keep food fresh for longer.

아니면 음식의 신선도를 보다 오래 지속하기 위해 오일을 쓰는 거예요.

So, you may still ask:

그래도 여전히 궁금증이 있으시겠죠.

Why are you trying to build a sustainable food system

왜 그러한 지속가능한 식품 시스템을 만들어내려고 애쓰는가

by driving a patient movement

그렇게 인내가 필요한 방식으로 말이죠.

in a country where it's almost a crime to take it slow?

느림은 곧 죄악과도 같은 그런 나라에서 말이에요. 왜냐고요?

Because, for me,

왜냐하면 저에게 있어서

the real secret to success is patience --

성공의 진짜 비결은 인내니까요.

a mindful kind of patience

바로 의식적인 인내 말이에요.

that requires knowing how to act while waiting,

기다리는 동안 어떤 행동을 해야 하는지 그것을 아는 게 필요한 거죠.

the kind of patience I learned with my grandmother's magic box.

제가 할머니로부터 받은 마술 상자, 그것으로 부터 배운 인내 말이에요.

After all, we do not inherit the earth from our ancestors.

결국 우리는 지구를 선대로부터 물려받은 것이 아닙니다.

We borrow it from our children.

우리의 미래 세대에게서 잠시 빌려온 것일 뿐입니다.
