"Pasta" comes from Latin,

وشەی پاستا وشەیەکی لاتینییە،

and it means "paste."

واتایی ھەویرە.

It's about putting together water and some powder,

واتا تێکەڵ کردنی ھەویر و ئاو،

so that you can actually shape it.

و دەتوانیت شێوەی پێ ببەخشیت.

There are cultures in the world that use rice powder,

لە ھەندێک کەلتوری جیھانی تۆزی برنج بەکار دێت،

others use soy powder.

کەلتوریتر تۆزی سۆیا بەکاردەھێنن.

In Italy, we tend to use durum wheat.

لە ئیتاڵیا، گەنمی دورەم بەکار دەھێنین.

Pasta existed for centuries,

چەندین سەدەیە پاستا ھەیە،

but it really blossomed during the Renaissance.

بەڵام لە سەردەمی رینەیسانس دەبوژێتەوە.

And it's only later on in the 17th century

that it became more mass produced.

Whenever you design an object of any kind,

you think of how you want it to perform.

So think about the same for pasta.

Do you want it to be ribbed

or you want it to be smooth?

The ribbed ones absorb the sauce better.

پاستایی پان، سۆس باشتر ھەڵدەمژێت.

Do you want them to be round

حەز دەکەی خڕ بێت

or do you want them to be square?

یان حەز دەکەیت چوارگۆشە بێت؟

They have a different feel on the palate.

ھەستی جیاواز لەسەر دەوریە دەبەخشن.

Everything is for a reason.

ھەموو شتێک ھۆکارێکی ھەیە.

In the amazing taxonomy of the pasta species,

سەبارەت بە پۆلین کردنی سەرسورھێنەری پاستا،

there are many different ways to divide it,

چەندین ڕێگە بۆ دابەش کردنی پاستا ھەیە،

but one of the basic divisions is between fresh pasta and dry pasta.

بەڵام دابەش کردنێکی بنچینەیی بریتییە لە پاستای فرێش و وشک.

Dry pasta is always durum wheat flour and water.

پاستای وشک لە ئاردی گەنمی دورام و ئاو پێک دێت.

Fresh pasta could be either that

پاستایی فرێش لەوایە ھەمان شت بێت یان

or it could be flour and eggs.

ھێلکەیشی تێدا بێت.

Just think of having a dough

بیر لە بوونی ھەویر بکەوە،

that you can shape in any way you want.

دەتوانیت ھەر شێوەیەکی پێ ببەخشیت کە دەتەوێت.

I mean, really, wouldn't you go crazy?

پێم وایە، توخوا ئەمە شێتانە نییە؟

So fresh and dry, but then, there's also long and short.

جگە لە فرێش و وشک، پاستای درێژ و کورتیش ھەیە.

And then within those families, there's even more diversity.

لە نێو خێزانەکان، جۆری جیاوازتریش ھەیە.

Let's talk about some really classical types of short pasta.

با باسی جۆرە باوەکانی پاستا بکەین.

Penne -- we all know them, right?

پێنی، ھەموومان پێی ئاشناین.

They are cut at a slanted angle,

بە گۆشەیی لار دەبڕدرێن،

perfect to pick up some of the sauce.

شێوەکەی بۆ ھەڵگرتنی سۆس نایابە.

"Farfalle" means "butterflies," or how do you call it here,

فارفێلێ، واتا پەپولە، لێرە بەم شێوەیە ناونراوە،

bow ties, because they are, like, pinched in the middle.

شێوەی پەپولەی ھەیە چونکە لە ناوەڕاستە بەیەکەوە بەستراوەتەوە.

"Orecchiette" means "little ears,"

ئۆرکیتی، واتا گوێچکەی بچووک،

and they're typical from Puglia, and they are delicious.

لە ناوچەی پۆلیا بەرھەم دێت و زۆر بە تامە.

And "conquilla," shells, and of course, they look like shells.

کۆنکیلا، واتا ھێلکە شەیتانۆکە، شێوەی ھاو شێوەی ئەم بوونەوەرەیە.

They are ribbed, so they scoop up the sauce on the outside

لوول و پێچە و سۆس دەوروبەری کۆ دەکاتەوە

and they are smooth on the inside.

لە ناوەراستیش نەرمە.

Pasta is definitely gorgeous,

پاستا قشتە،

but the form also is about how it touches the palate,

بەڵام شێوەی پاستا پەیوەستە بە شێوەی بەریەکەوتنی لەگەڵ قاپ،

how it touches the tongue,

چۆنیەتی بەریەک کەوتنی زمان،

so it's never just about giving it a shape.

بۆیە شێوەی پاستا شتێکی بێ بەھا نییە.

When you hone one object across centuries,

کاتێک بۆ ماوەی چەند سەدەیەک پڕۆژەیەک پەرە پێدەدەیت،

standards become really, really high.

پێوەرەکان زۆر زۆر بەرز دەبن.

Many so-called great designers failed miserably,

زۆرێک لە دیزاینەرەکان شکستیان ھێناوە،

because they tried to impose a shape onto pasta.

چونکە ویستویانە شێوەیەک بەسەر پاستا بسەپێنن.

The great Philippe Starck tried mandala.

فلیپ ستارک شێوەی ماندالای بەکار ھێنا.

Some parts of it, the walls, were very thick,

and the others were thinner,

بەشەکانیتری تەنک بوو،

so when you would boil the pasta,

some of it would be completely mushy

while part of it was too crunchy and uncooked.

So really wrong, but they were not women from Bologna,

ھەڵەیەکی گەورە بوو، چونکە ژنێکی بۆڵۆنیا،

they were not chefs from Naples,

یان شێفێکی ناپولی نییە،

they were not centuries of families of grandmothers

بەڵکو خێزانێکی دوور و درێژی داپیرەکان بوون

that were trying to improve on the thinness of the walls of the pasta.

There's no way to trace pasta back to one designer, one inventor,

بۆیە، ئەستەمە یەکەم دیزاینەری پاستا بدۆزینەوە، یان کێ داھێنەری پاستایە،

and that's the beauty of it.

It belongs to the people.

And if you think about it,

this simple mixture of a carbohydrate and water
